Red Hot Applesauce

How to Make It:
Peel apples and cut into small chunks (so you can get more into your pan) and put in a Dutch oven size pan.
DO NOT ADD WATER. Add 1 package of red hot candies. (This takes the place of the sugar).
Cover and put into 350 degree oven and bake for about 90 minutes (this can take longer, depending on your oven - check in again in 30 minutes).
Stir and cool.

*This is a Great recipe. The red hots give it a “cinnamony” flavor this is very good. Kids especially love this applesauce.

Pheasant’s Apple Relish
Recipe by Dolores Pheasant

Ingredients:
-8 large apples
-3 large onions
-2 bags of carrots
-5 green peppers
-3 celery stalks
-8 g. tomatoes}…
-1 zucchini}…      (any combination to make 4-5 cups)
-2 large cucumbers}…
* chopped or shredded all of the above
-3 cups vinegar
-4 cups sugar or (2 cups + 1 cup of Splenda)
-2 Tbsp cinnamon
-2 Tbsp allspice
-½ tsp cloves
-2 Tbsp celery seed
-2 Tbsp mustard seed

How to Make It:
In a large boiling pan, combine all ingredients. Simmer for a ½ hour. Put into canning jars. Put into boiling water bath for 15 minutes. Makes 7-9 pints.

Fresh Apple Cake

Ingredients:
Cake:
-4 cups of chopped apples, well chopped
-2 cups of sugar
-½ cup oil
-½ cup chopped walnuts
-1 cup raisins (optional)
-½ to 1 cup grated carrot (optional)
-2 tsp. vanilla
-2 eggs
-2 tsp. cinnamon
-2 tsp. baking soda
-1 -2 tsp. salt (your preference)
-2 cups flour
Topping:
-1 cube of Butter
-1 pkg. Of Cream Cheese
-1 tsp of Vanilla
-4 cups Powdered Sugar


How to Make It:
In a bowl combine, chopped apples and sugar. Set aside for 1 hour, let it juice up. In another bowl, mix oil, walnuts, raisins, carrots, vanilla, eggs, cinnamon, baking soda, and salt. Then beat together. Add in the flour. Pour into greased tube Cake Pan (Angel Food Cake Pan). Bake in preheated oven at 350 degrees for 45-60 minutes. (Check for doneness) Let cool for hour before removing from cake pan. While the cake is cooking, prepare topping. In a medium sized bowl, mix butter, cream cheese, vanilla and beat well. Then mix in the powdered sugar. When cake is out the cake pan gently pour over the topping and serve.

Baked Applesauce

How to Make It:

Can add 1 to 2 heaping tsp. of cinnamon if you like but is also good without spices. You do not have to stir the sugar and spices into the apples until after it is done. Cover and put into 350 degree oven for about 90 minutes (this can take longer, depending on your oven - check again in 30 minutes). Stir and cool. You will know when it is done when it is the consistency you like for applesauce.

*This is very good if you use one kind of apple or mix your apples and use 3 different types of apples. Mixing apples gives your applesauce a very unique flavor.

Jackie Pheasant’s Apple Pie    8-9 inch  two crust pie
Crust:
1 ¾ cups flour
1 teaspoon salt
2/3 cup plus 2 tablespoon shortening
4-5 tablespoon cold water

Measure flour and salt into bowl then cut in shortening thoroughly.  Sprinkle in water one tablespoon at a time until flour is moistened and cleans from side of bowl.  Roll out on a lightly floured board.  Place one crust in pie shell, then roll out the second and place to the side.

Filling: 
8 cups of thinly sliced golden apples (peeled)
1 cup sugar
1/3 cup flour
1 ½ teaspoon cinnamon
Dash of salt

Stir together the sugar, flour, cinnamon and salt, then mix in apples.  Place mixture into pie shell, top with 3 tablespoons margarine, top with second crust with slits cut in it.  Sprinkle a little cinnamon and sugar on top.  Bake at 425 degrees about 20 min, and then lower the temp to 350 degrees and bakes for another 20 min.  Crust should be brown and the filling is bubbly.

Pheasant’s Best Apple Cake
2 cups white sugar
½ cup margarinecream together
2 eggs

4 cups unpeeled chopped apples – add

2 cups flour
½ teaspoon salt
2 teaspoon baking sodasift together and then add to mixture
2 teaspoon cinnamon
1 ½ teaspoon nutmeg

Pour into a greased 9 x 13” pan and bake at 350 degrees for one hour.

Trieber’s Apple Cake
4 cups unpeeled, chopped apples
mix together with:
2 cup sugar

Add:
½ cup Wesson oil
1 cup chopped nuts ( walnuts or pecans)
2 eggs
2 teaspoon vanilla

Sift and Add:
2 Cups flour
2 teaspoons soda
2 teaspoons cinnamon
1 teaspoon salt

Pour into a 9 x 13” pan and bake at 350 degrees for one hour.

Grandma Jones’s Apple Goody
Combine:
6-8 cups sliced unpeeled apples
1 cup sugar with 2 tablespoons flour stirred in
½ teaspoon cinnamon

Put apple mixture into a buttered 12 x 15” pan

Combine together for Topping: 
2 cups brown sugar
2 cups flour
2 cups quick oats
1 cup melted margarine or butter
¼ teaspoon baking soda
¼ teaspoon baking powder
Pinch of salt

Bake in oven at 350 degrees for one hour and 15 min.
